After leaving a stable job in an office in Chukha, Dema went back to her home in the highlands with one goal: to make sure her community could get fresh bread and pastries. In the past, the people of Merak had to depend on supplies brought in from as far away as Trashigang. These goods often came stale and only lasted a week, which left people in the area with few food options.

The opening of “Phurpa’s Bliss Bite” is a big deal for the village. With help from her brother and the Loden Foundation, Dema opened the bakery without any formal training. But she quickly learned that the mountain environment was not very forgiving. It was hard to bake in the thin, cold air at high altitudes, especially getting the dough to rise right away.

The early reception was also a test of her willpower. Customers were quick to make harsh comparisons when her first products didn’t live up to the standards of urban bakeries that people were used to. Dema didn’t give up, though. She changed her methods to fit the unique weather in the Himalayas.

Phurpa’s Bliss Bite is the only bakery in Merak right now. What started as a daring idea has grown into an important part of the community. This shows that even at the highest altitudes, determination and local creativity can bring a new perspective—and new bread—to the most remote parts of the country.
